Made with Pronghorn and pork, this rich and flavorful meatloaf is heavily flavored with horseradish. A bit strong for the faint hearted.

Horseradish Loaf
Recipe type: Wild Game
Serves: 4
  • 2 Cups ground pronghorn
  • 3/4 Cup ground lean pork
  • 1/4 Cup minced onion
  • 1/3 Cup milk
  • 1 teaspoon salt
  • 2 Tablespoons ground beef suet
  • 1/3 Cup grated fresh horseradish
  • 2 eggs; beaten
  • 1/3 Cup catsup
  • 1 Cup cracker crumbs
  • 1/8 teaspoon freshly-ground black pepper
  • 1 teaspoon mild prepared mustard
  • 4 bacon strips
  1. Blend all ingredients except bacon strips lightly but thoroughly; shape the loaf and place in a greased loaf pan. Bake at 350 degrees for 1 hour. Top with bacon strips and cook for 30 minutes longer. This recipe yields 4 servings.
