Hazelnut Brittle

Hazelnut Brittle
Recipe type: Snacks
Cuisine: American
Serves: 1 recipe
  • 3 Cups sugar
  • 1 Cup light corn syrup
  • 1 Cup water
  • 4 Cups roasted and chopped hazelnuts
  • 3 Tablespoons butter
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 3 teaspoons baking soda
  1. In a large sauce pan, mix sugar, syrup and water. Cook until boiling, stirring constantly. Cover pan for one minute.
  2. Cook rapidly on high heat to soft crack (270 degrees F.) about 5 minutes. Add hazelnuts and continue cooking to crack stage (310 degrees F.) or until golden brown. Add vanilla, butter, salt and soda. Candy will foam up.
  3. Pour onto a buttered cookie sheet and rub a lightly buttered spoon on brittle to break bubbles. As candy cools, thin out to desired thickness. Take care about touching it directly as caramelized sugar causes severe burns.
