Ham and Potato Chowder

Ham and Potato Chowder

  • 2 Tablespoons butter
  • 1/4 Cup onion; chopped
  • 1/4 Cup green pepper; chopped
  • 4 medium potatoes; washed, peeled and cubed (1/2 inch)
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon pepper
  • 3 Tablespoons all-purpose flour
  • 2 Cups milk
  • 1 can (12 ounce) whole-kernel corn; undrained
  • 1 1/2 Cups ham; cooked and diced
  • parsley; minced
  • water
  1. Melt butter in 3-1/2-quart saucepan.
  2. Saute onion and green pepper until tender. Add potatoes, 2 cups water, salt, paprika and pepper.
  3. Cover and simmer about 15 minutes, or until potatoes are tender.
  4. Combine flour and 1/3 cup water in small bowl; blend well. Stir into potato mixture. Add milk.
  5. Simmer until slightly thickened, stirring frequently. Add corn and ham; heat through.
  6. Sprinkle each serving with parsley.
