Gulf Coast Deep Fried Speckled Trout

Ingredients
  • trout fillets
  • salt
  • black pepper
  • garlic salt
  • cormeal
  • cracker crumbs
  • white pepper
  • eggs
  • milk
  • peanut, vegetable or corn oil
Instructions
  1. Take fish fillets and rub in salt, pepper and garlic salt.
  2. Mix cornmeal and cracker crumbs in a bowl. Mix well.
  3. Sprinkle in white pepper.
  4. Mix eggs and milk, be sure to mix well.
  5. Pour oil into a deep pot and heat almost to boiling. Peanut oil is best.
  6. Dip each fillet into milk and egg mix. Roll each in cornmeal and cracker mix. Dip in hot oil.
  7. Each fillet will take 2 minutes or less to cook to a golden-brown.

Depending on the size of each trout caught, you can expect two to eight pieces of fillet per fish. If cut small, serve two pieces per person. If larger (6 ounces or greater), serve one per person.[br][br]Serve with fried potatoes, Sauteed Spinach with Garlic and Olive Oil and a salad of fresh field greens for a perfect meal.
