This refreshing salad is ideal for Summer, pairing the glorious flavor of grilled meat with the luscious and cooling nature of mango and Butterhead lettuce. Simple and nutritious.

Grilled Turkey Summer Salad with Mango
Doubles easily to serve 10 to 12 for parties.

Serves: 4 to 6
  • 5 4-ounce turkey cutlets, lightly pounded to an even thickness
  • 2 Cups French-style salad dressing, divided
  • 1/8 Cup unsalted butter
  • 1 1/2 Cups red onion, thin slice
  • 1 Cup sweet red peppers, seeded and cut into thin strips
  • 1 1/2 Cup fresh mango, cut into thin strips
  • 5 Cups Boston or Butterhead lettuce, shredded
  • 1 Cup cucumbers, sliced
  • freshly ground black pepper to taste
  1. Marinate turkey cutlets in 1 cup dressing for at least 4 hours.
  2. Remove turkey from dressing and discard marinade. Grill turkey over medium flame about 8 minutes per side or until turkey is cooked throughout and is no longer pink in the center.
  3. Meanwhile, in hot butter, sauté red onion and peppers until vegetables are al dente. Remove from heat and stir in mango slices, toss lightly.
  4. Place approximately 1/2 cup of shredded lettuce on each plate, top with grilled turkey cutlet and onion/mango sauté mixture. Garnish with several cucumber slices and drizzle with 1 cup additional Catalina dressing. Dust with black pepper.
