The wonderful Grilled Chipotle Chicken Quesadilla may be served as an appetizer or entree, for lunch or dinner. It has a rich, smoky flavor that entices the palate and is thoroughly enjoyable.
Grilled Chipotle Chicken Quesadilla

Grilled Chipotle Chicken Quesadilla
Recipe type: Entree, Main
Serves: 1
  • 1 (14-inch) tortilla flour tortilla
  • 1/8 Cup Monterey Jack cheese, shredded
  • 1/8 Cup Manchego cheese, shredded
  • 1/2 chipotle-marinated chicken breast, grilled, sliced
  • 1/8 jalapeno, sliced
  • 1/8 Cup corn, roasted
  • 1/4 Cup black beans, cooked, seasoned
  • 1/8 Cup escabeche (Mexican pickled vegetables), julienned
  • 1/8 Cup cilantro, chopped
  • 2 ounces tomatillo salsa
  1. Sprinkle one side of the tortilla with cheeses.
  2. Top with chicken, jalapeno, corn, beans, escabeche and cilantro.
  3. Fold tortilla in half, place on a flat top or grill.
  4. Warm over low heat until cheese is melted, about three minutes per side.
  5. Serve salsa on the side.
Use any salsa you prefer or Guacamole if preferred.
