Green Tea Sorbet

Green Tea Sorbet
This recipe makes a gallon of delicious Green Tea Sorbet.

Cuisine: French
Serves: 1 gallon
  • 2 Cups water
  • 4 green tea bags (Sencha)
  • 4 Tablespoons honey
  • 2 Cups super-fine sugar
  • 1 vanilla bean, scraped
  • 4 medium mint leaves, julienned
  • 16 egg whites
  1. Boil water; steep tea bags 10 minutes.
  2. Stir in honey and sugar; dissolve.
  3. Add vanilla bean and mint; chill well.
  4. Meanwhile, whip egg whites to stiff peaks. Fold into green tea mixture.
  5. Freeze in Ice cream maker.
The recipe may be divided, easily for smaller ice cream makers. We recommend a specialty machine from Cuisinart, but any machine will work well with this recipe.
