This exceptional butter is easy to make, deliciously flavored and has a soft, yet peppery taste.

Ingredients
  • 125 g (4 ounces) butter
  • 50 g (2 ounces) watercress, finely chopped
Instructions
  1. 1. Whisk the butter until soft but not oily.
  2. Add the watercress and beat in well. Chill in the refrigerator in a small bowl, covered, or form into a long roll in greaseproof paper or plastic wrap.
  3. To serve cut the roll into 1 cm (1/2-inch) slices and place on the meat or fish or use small knobs from the bowl. You may also soften it and pipe through a pastry bag fitted with a star or other tip.

Serve in a small souffle cup with additional butters for your formal dinner party or other entertaining.[br][br]Makes a great spread for ham or cheese sandwiches. Wonderful on radish halves or cucumber slices!
