A very simple, easy and light pate that is wonderful at parties and always gets compliments for the cook.

Goat Cheese and Sun-Dried Tomato Pate
Recipe type: Appetizers
Serves: 4
  • 3 ounces jarred sun-dried tomatoes; drained and chopped
  • 4 ounces goat cheese
  • 1/8 teaspoon dried thyme
  • 8 large slices fresh French bread
  • 2 teaspoons minced parsley
  1. In a medium-sized bowl combine tomatoes, goat cheese, and thyme. Lightly toast French bread and spread with tomato mixture.
  2. Top with parsley and serve.
NOTES: The full flavor of sun-dried tomatoes, available in gourmet stores, combines with goat cheese to make a delicious appetizer of picnic spread.

For accompaniment, serve rounds of lightly toasted French bread.

To reduce the calories in the spread drain the olive oil from the jarred sun-dried tomatoes.
