Gingerbread Loaf

Gingerbread Loaf

Serves: 1 loaf
  • 1/2 pint milk
  • 2 ounces butter
  • 1 Tablespoon black treacle
  • 8 ounces mixed fruit
  • 8 ounces granulated sugar
  • 10 ounces self-rising flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon mixed spice
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon baking powder
  1. In a pan gently warm together all the wet stuff.
  2. When the butter has melted, place the warm ingredients into a mixer bowl and add the dry stuff.
  3. Mix thoroughly and place in a greased 2 pound loaf tin. Bake slowly for 45 to 60 minutes at 325 degrees F / 160 degrees C / gas mark 3.
All weights and measures in British (Imperial) measurements.
