- 1. Make about 6 cuts from the top almost to the base of each gherkin, taking care not to cut right through the base.
- Spread the gherkins out carefully into fan shapes, with the base as a hinge.
- Use to garnish cocktail snacks and salads.
Place one atop an individual portion of chicken liver terrine, or set a few on a cheese tray.
