  1. 1. Make about 6 cuts from the top almost to the base of each gherkin, taking care not to cut right through the base.
  2. Spread the gherkins out carefully into fan shapes, with the base as a hinge.
  3. Use to garnish cocktail snacks and salads.

Place one atop an individual portion of chicken liver terrine, or set a few on a cheese tray.
