Fried Rabbit

Ingredients
  • 1 rabbit
  • 1 Quart water
  • 4 Tablespoons salt
  • flour
  • 1/8 teaspoon paprika
  • freshly-ground black pepper, to taste
  • 1 pinch tarragon; or to taste
  • 1 pinch thyme; or to taste
  • 1 pinch sage; or to taste
  • oil
Instructions
  1. Soak rabbit for 1 hour in salted water. Rinse and dry meat well. Cut meat into parts to fry. Coat each piece with mixture of flour, paprika, pepper, tarragon, thyme and sage. Fry rabbit in oil until golden-brown.
