Flexible Hamburger Skillet

Serves: 4
  • 1 pound extra-lean ground beef; fresh or frozen (thawed)
  • 1 can reduced-fat cream of mushroom soup; (10 3/4 ounces)
  • 1 Tablespoon skim or low-fat milk (to 2 Tablespoons
  • 4 ounces potato or tortilla chips
  • 2 ounces shredded low-fat Cheddar cheese
  1. Place the meat over medium-high heat in a 12-inch, nonstick skillet. Cook until completely browned, turning and breaking up the meat from time to time.
  2. Reduce heat to medium-low. Add undiluted soup and 1 Tablespoon milk; stir until soup is well-combined and hot, about 3 minutes.
  3. If the mixture is too thick, add remaining 1 Tablespoon milk.
  4. Serve at once over potato or tortilla chips.
  5. Garnish with shredded Cheddar and serve.
An extremely flexible recipe. We've added sauteed mushrooms; cooked onions; a combination of sauteed pepper, celery and onions; and blended it with prepared boxed macaroni and cheese. It's very difficult to mess this one up, so be creative and make a new family favorite today.
