Fish Bowl

Serves: 2
  • 1/2 pound fresh salmon
  • juice of 1/2 lemon
  • 5 Tablespoons soy sauce
  • 5 Tablespoons water
  • 1/2 Cup frozen stir-fry vegetables
  • leftover rice; warmed
  1. Place salmon rather snugly in a microwave-safe dish. Over the fish, squeeze the lemon juice and add soy sauce and water.
  2. Cover the dish with plastic wrap and microwave on high about 3 1/2 minutes. Time the cooking so the fish is slightly undercooked -- a little darker in the middle than on the top.
  3. Set fish aside while you microwave stir-fry vegetables according to package directions. Add the cooked fish, the sauce and the vegetables to a bowl of leftover heated rice.
This recipe yields 2 servings.
