Fennel and Rice
Recipe type: Rice Dishes
Serves: 4
  • 1 medium fennel bulb
  • 1 sweet red pepper
  • 1 small onion, chopped
  • 1 Tablespoon vegetable oil
  • 1/2 Cup brown rice
  • 1 bay Leaf
  • 2 Cups water
  1. Trim off the top of the fennel bulb. Cut the fennel into small cubes. Clean the pepper and cut it into small cubes. Combine the fennel, pepper, onion and vegetable oil in a saucepan. Cook over medium heat for 2 minutes. Add the rice, bay leaf and water. Bring to a boil, cover, and turn the heat to low. Cook for 30 to 35 minutes, or until the rice is tender.
