Farmer's Market Spring Salad

Add some grilled steak, chicken or seafood to this for a perfect meal, ideal for brunch.

Ingredients
  • 8 ounces soft chevre cheese
  • 3 Tablespoons fresh parsley, minced
  • 2 Tablespoons fresh basil, minced
  • 2 Tablespoons fresh garlic thistles, minced
  • 1 Tablespoon coarse-cracked pepper
  • 8 ounces baby lettuce mix with arugula
  • 1 bunch radishes, sliced
  • 1 Cup strawberries, sliced
  • 16 to 20 edible flowers
DRESSING:
  • 1/4 Cup apple-cider vinegar
  • 2 Tablespoons local honey
  • 2 Tablespoons onion, finely minced
  • 1 Tablespoon whole-grain mustard
  • 1/2 teaspoon salt
  • freshly ground pepper, to taste
  • 1 Cup olive oil
Instructions
  1. For salad, scoop cheese into very small balls. Combine herbs and pepper; roll cheese to coat. Arrange of flat sheet; refrigerate until firm.
  2. Toss together lettuce, radishes and berries; add dressing to taste. Plate salad and top each portion with 3 cheese balls; garnish with flowers.
DRESSING
  1. Make dressing by mixing together vinegar, honey, onion, mustard, salt and pepper. Slowly whisk in oil.
Notes
Serve this with a simple crusty, country bread, a glass of a fruity white wine and enjoy the love and smiles of family and friends.
