Farm Egg Salad

Farm Egg Salad

  • 2 new potatoes, baked
  • 2 eggs, hard-cooked
  • 2 red beets, baked
  • 1 ounce fresh dill
  • 3 ounces Balsamic dressing (recipe follows)
  • 1 clove pickled garlic, sliced
  • 5 capers
Balsamic dressing
  • 1/2 Cup Balsamic vinegar
  • 1 teaspoon red-wine vinegar
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon mayonnaise
  • salt and pepper, to taste
  • 1/4 Cup olive oil
  1. Refrigerate potatoes, eggs and beets overnight.
  2. Slice potatoes, eggs and beets into rounds and arrange on plate. Sprinkle with dill, capers and dressing.
Balsamic dressing
  1. Thoroughly combine vinegars, mustard, mayonnaise and salt and pepper. Continue mixing, slowly adding olive oil.
