Enola's Mustard Sauce
Recipe type: Diabetic
Serves: 1 1/2 cups
  • 1 Tablespoon reduced-calorie butter
  • 1 1/2 Cups evaporated skim milk
  • 2 Tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1 egg yolk
  • 1 Tablespoon cornstarch
  1. Melt the butter in a medium skillet over medium heat. Stir in 1 cup of the milk, the mustard, salt, sugar, and white pepper. Cook and stir for 3 min; remove from the heat. Beat the egg yolk and cornstarch in the remaining 1/2 cup milk; gradually stir into the skillet. Return the skillet to medium heat; cook and stir for min, but do not boil.
