Toad in the Hole is a simple, but wonderful recipe that is always a favorite, particularly by children. It comprises sausages cooked in Yorkshire Pudding (a form of popover). An excellent budget meal, it is perfect served with a plainly cooked vegetable and salad on the side.

The sausages used in this recipe may vary, from pork sausage to chicken or turkey. Use a mild one, unless you enjoy really spicy food.

  • 1 1/3 Cups all-purpose flour
  • 1 teaspoon Kosher salt
  • 3 large eggs; lightly beaten
  • 3/4 Cup whole milk
  • 3/4 Cup water
  • 1 pound sausages
  1. Several hours before serving, prepare batter. Combine flour, salt and pepper in bowl. Add eggs, milk and water. Whisk together or beat with electric mixer till well blended. Let batter sit fridge, stirring occasionally.
  2. Preheat oven to 400 degrees F.
  3. Place sausage in 8"x 8" square metal pan. Bake in oven till browned on all sides, turning occasionally, about 8 to 10 minutes. Drain off fat, leaving enough to cover the bottom of the pan.
  4. Pour batter over sausages in pan. Return to oven, bake 35 to 45 minutes or till top is brown and crisp.
Serve with Onion Gravy.
