Sweet Potato Home Fries

Ingredients
  • 4 large sweet potatoes
  • 2 onions; sliced thin
  • 4 Tablespoons butter; (1/2 stick)
  • 1/4 teaspoon ground nutmeg
  • salt, to taste
  • freshly-ground black pepper to taste
Instructions
  1. Wash the sweet potatoes and wrap them in heavy-duty aluminum foil.
  2. Place them on the grill at a medium-high heat for 30 to 40 minutes, depending on their size, turning them occasionally. Remove them when they're still a bit firm when pierced with a sharp knife. Allow them to cool.
  3. Unwrap the potatoes and discard the foil. Peel the potatoes and cut them into 1/4-inch slices. Place the sweet potatoes in a large nonstick skillet or a cast-iron skillet and add the onion, butter, nutmeg, salt and pepper.
  4. Place on high heat and cook, stirring frequently, until the potatoes are tender and slightly brown.
  5. This recipe yields 4 servings.
Notes
As the natural sugars in sweet potatoes and onions caramelize on the grill, the flavor of each vegetable improves, resulting in a dish that is greater than the sum of its parts.

These home-fries are great as a side dish with steak, or even as an appetizer.
