Grilled Salmon with Citrus Salsa

  • 2 6-ounce Salmon steaks
  • 1 teaspoon Creole spice
  • 1/4 Cup orange sections, zested before cutting
  • 2 Tablespoons lemon sections, zested before cutting
  • 2 Tablespoons lime sections, zested before cutting
  • 1 Tablespoon shallots, minced
  • 1 Tablespoon olive oil
  • 1 teaspoon honey
  • 1 Tablespoon cilantro, chopped
  • salt and pepper, to taste
  1. Preheat the grill and the fryer.
  2. Season the fish with the spice. Place on the grill.
  3. In a small bowl, combine the sections, shallots, zest, olive oil, honey, and cilantro.
  4. Season with salt and pepper.
  5. Remove the fish from the grill.
  6. Plate the fish. Top with the salsa.
Serve with grilled zucchini slices.
