Huevos Rancheros (Mexican Eggs)

Ingredients
  • 1 Cup green chile salsa
  • 4 ounces longhorn cheese
  • 4 corn tortillas
  • 4 each eggs
  • 1 oil and butter for frying
Instructions
  1. Dip tortillas in heated oil and remove quickly.
  2. Set tortillas on baking pan to keep warm.
  3. In a frying pan, panfry eggs in butter until the whites are set but the yolks are still soft.
  4. Put a fried egg on each tortilla. Heat salsa and spoon over each egg.
  5. Sprinkle grated cheese on top.
  6. Slip baking pan under broiler until cheese melts.
