Roast Turkey with Chestnut Filling

  • 1 turkey
  • 1/2 Cup butter
  • salt
  • 1/4 Cup flour
  • *Chestnut Stuffing (see Recipe)
  1. Preheat the oven to 400 degrees F.
  2. Dress and clean turkey and fill with Chestnut Stuffing.
  3. Cream together the butter and flour and rub the legs, wings, and breast with the mixture.
  4. Place in the oven for 15 minutes. Season with salt.
  5. Reduce the heat to 350 degrees F and finish roasting for 3-1/2 hours or until tender. The turkey is done when a knife inserted into the thickest part yields clear liquid.
  6. Serve with Great Gravy for Turkey
  7. Turkey Baste
Make sure to prepare a simple basting liquid for your turkey to keep it moist. Either use commercial turkey stock or, use the turkey neck and giblets with an onion studded with cloves, a bouquet garni and other ingredients to your preference, and prepare it with broth.
