Braised Onions with Whiskey

For the whiskey, you may use Scotch, Rye, Bourbon or Irish, but use an inexpensive version. This is no place to use your aged single-malt Scotch.
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 24 small onions; peeled and trimmed
  • 1 teaspoon salt
  • 1/2 teaspoon finely ground pepper
  • 1/4 Cup broth beef or chicken
  • 1/4 Cup whiskey
  1. Melt oil and butter in saucepan. Add onions and cook over high heat 2 minutes. Add salt, pepper and broth, reduce heat.
  2. Cover and simmer for 12 minutes or until just tender. Add whiskey and let the sauce cook down slightly.
  3. As a variation, soak 2 Tablespoons raisins in the whiskey before you cook the onions, and add this at the end.
