Black Bean Dip with Garlic

Ingredients
  • 1 can (19-ounce) black beans, drained and rinsed
  • 2 large cloves garlic, coarsely chopped
  • 2 Tablespoons coarsely chopped onion
  • 2 Tablespoons coarsely chopped fresh cilantro, plus additional sprigs for garnish
  • 1 Tablespoon fresh lime juice
  • 1 small fresh chili pepper (your choice)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon thyme
  • salt and freshly ground pepper
Instructions
  1. In a food processor, combine all the ingredients except cilantro sprigs. Add 2T water and process until smooth. Transfer the dip to a serving bowl, garnish with cilantro sprigs, and serve with your favorite fat-free tortilla chips. (Adapted from December 1993 Food & Wine.)
