Veal Chili with Beans

Ingredients
  • 1 1/2 teaspoons canola oil
  • 2 teaspoons garlic, crushed
  • 1 Cup onion, diced
  • 1 Cup green bell pepper, diced
  • 1 Cup carrots, diced
  • 1 pound ground veal
  • 28 ounce can white and red kidney beans
  • 2 Tablespoons tomato paste
  • 1 Tablespoon chili powder
  • 1/4 teaspoon dried oregano
  • 3/4 teaspoons dried basil
Instructions
  1. In a large nonstick saucepan, heat oil. Saute garlic, onion, green pepper and carrots until softened.
  2. Add veal and saute until no longer pink.
  3. Add beans, tomato paste, chili powder, oregano and basil.
  4. Cover and simmer for 30 minutes.
  5. Serve in soup bowls with French bread or crackers.
