Basic Duck Marinade

  • 2 Cups dry red wine
  • 1/2 Cup soy sauce
  • 1/4 Cup Balsamic or red wine vinegar
  • 1/4 Cup vegetable oil
  • 1 medium onion; diced
  • 6 cloves garlic; minced
  • 1 Tablespoon freshly-cracked black pepper
  1. Combine all ingredients in a container with a tight fitting lid. Shake well and pour over game. Cover and refrigerate for 6 to 24 hours, turning occasionally. Before cooking, let game drain and pat dry with paper towels. This recipe yields about 1 quart.
