Jo Parodi's Swedish Meat Loaf

  • 1 Cup soup, cream of mushroom
  • 1 1/2 pounds beef, ground
  • 1 egg; slightly beaten
  • 1/2 Cup bread crumbs, fine dry
  • 1/4 teaspoon nutmeg, ground
  • 1/2 Cup cream, sour
  1. Mix thoroughly beef, egg, bread crumbs, nutmeg and 1/3 cup of soup.
  2. Shape firmly into a loaf shape; place in shallow baking pan. Bake at 350 degrees for 1 hour. Blend remaining soup and sour cream.
  3. Heat; stir now and then. Serve this sauce over the meat loaf; sprinkle with additional nutmeg. Garnish with cucumber slices.
Easy to cook as well as easy on the budget.
