Pate Cregyn Gleision Mucai (Menai Pride Mussel Pate) Welsh

Ingredients
  • 3 ounces cooked and shelled mussels
  • 1 ounce carrot
  • 4 ea egg yolks
  • 1 pinch mixed herbs
  • 1 pinch crushed garlic
  • 1 seasoning
  • 1 ounce celery
  • 1 ounce breadcrumbs
  • 2 ounces herring roe
  • 1 pinch dill weed
  • Brandy and double cream to taste
Instructions
  1. Finely mince mussels, vegetables and herring roe. Add herbs, seasoning and breadcrumbs.
  2. Blend well with egg yolks, brandy and cream. Cook for 1/2 hour at 350 degrees F. in a [url href="https://www.epicurus.com/Glossary/bain-marie-5/41491">Bain-marie[/url] in the oven. Cook and serve with toast fingers.
