Leek Broth - Cawl Cennin

  • 1/2 pound piece of bacon
  • 2 large leeks
  • 1 pound potatoes
  • 1/2 pound carrots
  • 1/2 pint milk
  • 2 teaspoons chopped parsley
  • salt and pepper
  • cheese (Cheddar works well or Caerphilly)
  1. Gently boil the bacon for 40 minutes.
  2. Skim off the fat.
  3. Peel and cut up the potatoes and carrots.
  4. Clean and chop the leeks. Add the vegetables to the bacon and simmer until they are tender-about 20 minutes. Add the milk and reheat but do not boil.
  5. Season with salt and pepper to taste. Add the parsley.
  6. Serve with grated cheese.
