Yellow Tomato Concasse

Ingredients
  • 4 whole summer harvest yellow tomatoes; peeled, de-seeded, chopped
  • 1/4 Cup fresh chives; diced finely
Instructions
  1. Peel and remove the seeds from the tomatoes. Chop the tomatoes coarsely, until they appear to be "medium dice".
  2. Dice the chives to a fine consistency.
  3. Combine the chives and yellow tomatoes.
