Baked Potato Chips

  • 3 1/2 pounds red boiling potatoes or white boiling potatoes, cut crosswise into 1/8-inch thick slices
  • 6 Tablespoons butter - melted (3/4 stick)
  • salt
  • freshly ground pepper
  1. Position racks in upper and lower third of oven and preheat to 500 degrees F.
  2. Lightly grease 2 baking sheets.
  3. Arrange potato slices in single layer on prepared baking sheets.
  4. Brush generously with butter.
  5. Bake 7 minutes.
  6. Switch pan positions and continue baking until potatoes are crisp and browned around edges, about 7 to 9 minutes.
  7. Transfer to heated platter.
  8. Sprinkle with salt and freshly ground pepper.
  9. Serve immediately.
