Marinated Cucumbers

  • 1/3 Cup white distilled vinegar
  • 1/4 Cup sugar
  • 1/4 Cup water
  • 1/4 teaspoon salt
  • 1 large cucumber
  • 1/4 Cup chopped roasted peanuts
  1. This simple condiment from Thailand provides a cooling counterpart to a spicy entree. Combine vinegar, sugar, water and salt in a blender. Peel cucumber, cutting 1 inch of each end off, slice thick and place in a bowl. Add dressing and garnish with chopped peanuts.
