Ginger, Mint and Honey Marinade for Lamb

Ingredients
  • 1 Cup fresh orange juice (about 2 oranges)
  • 1/4 Cup soy sauce
  • 1/4 Cup honey
  • 2 Tablespoons chopped fresh mint or 1 teaspoon dried
  • 2 Tablespoons finely chopped fresh ginger or 1 teaspoon ground
  • 3 cloves garlic, minced
  • salt and freshly ground pepper
Instructions
  1. Combine all ingredients and mix well. Pour over lamb. Marinate at room temperature for at least 2 hours or refrigerate overnight. Remove from oven and use remainder as a glaze.
