Red Onion Gravy

  • 1 large red onion, peeled and sliced
  • 20 fluid ounces (600 ml) beef stock
  • 4 Tablespoons port
  • 1 teaspoon Dijon mustard
  • 2 Tablespoons cornstarch
  • salt and freshly ground black pepper
  1. Heat the oil in a non stick frying pan and add the onion.
  2. Cook over a medium to low heat for 10 minutes, until the onion has softened.
  3. Add the stock, port, mustard and seasoning to the pan, and bring to the boil.
  4. Reduce the heat and simmer for 15 minutes.
