Green Beans With Lemon Sauce (Faglioni al Limone)

Ingredients
  • 2 Cups chicken broth
  • 2 Cups water
  • 1 pound green beans, washed and trimmed
  • 2 Tablespoons unsalted butter
  • vegetable cooking spray
  • 1 Tablespoon onion; thinly sliced
  • 3 Tablespoons lemon juice
  • 1 large egg; beaten
  • 1 Tablespoon parsley; chopped
Instructions
  1. Heat chicken broth and water to boiling. Add green beans.
  2. Cover and boil for 8 minutes or until tender. Drain.
  3. Coat a large skillet with cooking spray. Add butter until it melts at medium heat.
  4. Saute onion in butter. Add beans and lemon juice.
  5. Stir in egg. Cook 3 minutes, stirring frequently, until egg is cooked.
  6. Sprinkle with parsley.
