Mario's Linguine with Clams

Ingredients
  • 3/4 pound linguine
  • 3 Tablespoons olive oil
  • 2 Tablespoons butter
  • 2 cloves garlic; minced
  • 1/4 teaspoon dried red pepper flakes
  • 1 Cup clam juice
  • 1 1/2 pounds small clams, preferably Manila
  • 1/4 Cup white wine
  • 1 can chopped clams (6 1/2 ounce)
  • 2 Tablespoons chopped Italian parsley
Instructions
  1. Cook linguine in plenty of salted water until al dente, about 10 minutes.
  2. Heat oil and butter in large skillet over medium heat. Add garlic and red pepper flakes and cook until garlic is softened, about 3 to 4 minutes. Add clam juice and simmer 5 minutes.
  3. Add fresh clams, cover and cook until clams have opened, about 5 minutes. Be sure to discard any that didn't open completely. Remove clams and set aside.
  4. Add wine, canned clams and their juice, and parsley. Simmer another 5 minutes. Toss cooked pasta with sauce and top with fresh clams.
Notes
This recipe yields 4 servings.
