Basic Tomato Sauce

  • 1/2 small red onion
  • 2 Tablespoon extra virgin olive oil
  • 1 clove garlic
  • 10 ripe tomatoes
  • 1 small plum tomatoes
  • 150 milliliters water; (1/4 pint)
  • 1/2 teaspoon caster sugar
  • 1 handful golden marjoram leaves
  • freshly ground salt and black pepper
  1. Heat the oil in a large pan and add all prepared ingredients. Cook until soft. Puree in a blender until smooth. Pass through a non reactive sieve and discard any debris. Reheat and reduce down until thickened. Check seasoning and adjust if necessary.
