Baked Pears with Cranberry Hazelnut Filling

  • 4 pears; peeled, halved, and cored
  • 2 Cups fresh cranberries; chopped
  • 4 Tablespoons sugar
  • 1 Cup hazelnuts; chopped
  1. Place pears cut-side up in baking dish.
  2. Combine cranberries, sugar and hazelnuts.
  3. Place 2 tablespoons filling in each pear half.
  4. Bake at 350 degrees until tender and bubbly, about 30 minutes.

We used underripe Comice pears here (the round, greenish-yellow variety), which held their shape during cooking and produced a nice buttery flavor. Other good winter pears for baking include the Anjou, Bosc and Nelis varieties.
