  • shortbread cookies, crushed
  • salted butter, melted
  • brown sugar
  • 1 pound cream cheese
  • 1/2 pound French cheese *
  • 1/3 Cup sugar; granulated
  • 1 Tablespoon unbleached flour
  • 4 eggs; large; separated
  • 1/4 Cup sour cream
  • 1/4 Cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon confectioners' sugar
  1. Use soft double creme French cheese in this recipe.
  2. Mix together the crushed shortbread cookies with the melted butter and brown sugar in a bowl. Press into the bottom and inside walls of an 8-inch springform pan. Make sure the crust rises to the edge of the pan.
  3. Preheat the oven to 350 degrees F.
  4. In a large mixing bowl, beat together the cream cheese and the double creme, then add the sugar and flour and beat until thoroughly blended. Stir in the egg yolks, sour cream, heavy cream and vanilla.
  5. Beat the egg whites until they are frothy, then gradually add the confectioner's sugar and beat until the whites form stiff peaks. Fold the whites into the cheese mixture.
  6. Pour the mixture into the prepared crust and bake for 45 minutes, or until the center is firm.
  7. Cool to room temperature, then chill before serving.
If you are on a diet and have to ask how many calories this is, don't even think of making this recipe.

Use a soft cheese, such as Neufchatel, or a double cream St. Andre or Brie without the rind.
