Eggless Carrot Cake Recipe

  • 4 Tablespoons honey or golden syrup
  • 6 ounces butter
  • 8 ounces sifted self raising flour
  • 4 teaspoons baking powder (very important)
  • 1 teaspoon cinnamon
  • 9 ounces grated carrots
  • chopped nuts (optional)
  • seeds (optional)
  • sultanas (optional)
  • orange/lemon zest (optional)
  1. Melt the honey, syrup and butter together in a saucepan. Remove from the heat and add the other ingredients. Mix well. Put into a greased cake tin. Cook until cake tests done at 160 degrees C., 325 degrees F., gas mark 3/4.
