Italian Cream Cake II

  • 1 Cup buttermilk
  • 1 teaspoon soda
  • 5 eggs
  • 1 butter
  • 2 Cups plain flour
  • 1/2 Cup shortening
  • 2 Cups sugar
  • 1 teaspoon vanilla
  • 1 can coconut; (small can)
  1. Cream together the butter, shortening and sugar. Add eggs, beat well. Put soda in buttermilk. Add buttermilk and flour alternately. Add vanilla and coconut, beat well. Pour batter into two well greased and floured nine-inch layer cake pans. Bake at 350 degrees F., for about twenty five minutes.
  2. Slice each layer crosswise into 2 layers each.
  3. Ice with the following icing recipe:1 package, 8 ounces cream cheese, softened; 1 stick oleo, softened; 1 teaspoon vanilla; 1 box powdered sugar. Beaten togther in a mixer.
  4. Combine cheese and oleo. Mix well. Add sugar and vanilla. Mix until creamy. Spread on each layer and sides and top.
