Apple Pork Cheeseburgers

  • 1 1/4 pounds ground pork
  • 1 small yellow onion, finely chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1 Tablespoon parsley, finely chopped
  • salt, to taste
  • pepper, to taste
  • 1 apple, cored and thinly sliced, preferably something crisp like a Gala or Granny Smith
  • 1 small piece of brie, sliced into at least 4 thin slices, about 1/8-inch thick.
  • green leaf or Romaine lettuce, 4 leaves, washed and dried
  • 4 hamburger buns, preferably with a crunchy crust
  • Dijon mustard
  • mayonnaise
  1. In a medium-sized bowl, combine pork, onion, parsley, salt and pepper. Mix well until completely combined. Form the mixture into 4 patties, about 3/4-inch thick.
  2. Heat a large frying pan over medium heat or your grill (we used a cast iron grill pan). Cook the burgers until cooked through, 4 to 5 minutes on each side. Then, place the sliced brie on top of each burger, cover the frying pan either with a lid or just a sheet of foil, turn off the heat and let them sit for a minute or two until the cheese is melted.
  3. To serve, place the lettuce on the bottom piece of the bun, top with the grilled cheeseburger, and top with the apple slices. Spread Dijon and/or mayonnaise on the cut side of the top half of the bun and close.
If you grill the burgers, transfer to a plate before topping with the brie and cover the plate loosely with foil to allow the cheese to melt. Brie melts quickly, so there's no need to wait long.
