Caribbean Cocktail

  • 300 ml coconut milk
  • 2 ripe mangoes, peeled, deseeded and chopped
  • 6 Tablespoons lime juice
  • 1 teaspoon grated lime zest
  • 100g caster (superfine) sugar
  • 1 teaspoon vanilla extract
  1. Place all the ingredients into a blender or processor and blend until smooth. Serve in glasses over ice.
The exotic flavors of the Caribbean are present in this smooth non-alcoholic drink.
