Brunch Casserole

Ingredients
  • 6 slices day old bread; cubed, preferably an egg-bread like challah
  • 1 1/2 pounds bulk sausage (hot or mild)
  • 2 Cups cubed sharp cheddar cheese (or shredded)
  • 2 1/2 Cups whole milk
  • 4 eggs; beaten
  • 1 large jar mushrooms; sliced and drained
  • 1 can mushroom soup
  • 1 medium onion; peeled and grated
  • salt; to taste
  • freshly-ground black pepper; to taste
  • chopped fresh parsley; if desired
Instructions
  1. Brown sausage in a large skillet and drain to remove fat.
  2. Grease a 9- by 13-inch casserole or baking pan. Add the sausage, bread and cheese.
  3. Mix all remaining ingredients together and pour into the pan.
  4. Bake at 325 degrees F for 1 1/2 hours.
  5. May be made the day before and cooked for about 1 hour. Refrigerate overnight.
  6. When ready to use, heat for 40 minutes at 325 degrees F.
