Spicy Tropical Salsa
  • 3 medium papayas, seeded and diced
  • 3 medium nectarines, pitted and diced
  • 3 starfruit (carambola), diced
  • 6 green onions, thinly sliced
  • 1/3 Cup yellow bell pepper, seeded and diced
  • 1/3 Cup fresh cilantro, coarsely chopped
  • 1/3 Cup fresh lime juice
  • 1/3 Cup fresh orange juice
  • 3 Tablespoons jalapeno pepper, seeded and diced
  • 1 teaspoon salt
Grilled Tuna
  • cooking spray
  • 4 tuna steaks (about 5 ounces each)
  • salt
  • freshly cracked black pepper
Spicy Tropical Salsa
  1. In a medium bowl, combine papayas, nectarines, star fruit, green onions, yellow bell pepper, cilantro, lime and orange juices, jalapeno and salt. Cover and allow to stand at room temperature for one hour.
Grilled Tuna
  1. Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of tuna with salt and cracked pepper. Place tuna on hot pan and cook 2 to 3 minutes per side for medium doneness.
  2. Serve the tuna topped with the salsa.
The salsa makes much more than you'll possibly need for this dish, even with generous portions. Refrigerate the remaining amount and use it with a salad, grilled chicken, pork chops or even with scrambled eggs. The flavor will improve overnight.
