Watercress

Ingredients
  • watercress (salad cress)
Instructions
  1. 1. Wash, dry, and cut the stalks short.
  2. Keep in a polythene bag in the refrigerator until needed.
  3. Watercress can be used to garnish many different dishes.
  4. In particular, it is a classic garnish for roast game birds and cold poultry.
Notes
For many years watercress has grown in our streams and ditches. It is only in recent years that is has been grown commercially. The dark green leaves have a peppery flavor and are widely used in salads and sandwiches. They also make an attractive garnish.

TIP

Discard only the very coarse stalks, or add them to stocks and soups for extra flavor.
