Shrimp Burgers

A mildly piquant flavor is added by the Chipotle Mayonnaise, enhancing the subtle flavor of the shrimp.
  • 12 jumbo raw shrimp (16/20), peeled and deveined, chopped coarsely
  • 2 Tablespoons freshly squeezed lemon juice
  • 1 egg, lightly beaten
  • 1 Tablespoon sesame seeds
  • 4 ounces fresh breadcrumbs from soft white bread
  • 2 Tablespoons chopped fresh cilantro
  • 1 egg, lightly beaten
  • 2 teaspoons chilli sauce
  • plain flour for dusting
  • olive oil for frying
  • 4 Tablespoons Chipotle Mayonnaise
  • 4 hamburger buns, halved
  • green leaf lettuce or Romaine, washed, rinsed and separated
  1. Mix the shrimp with the lemon juice.
  2. Blend the shrimp with the first egg, forming a patty. Set these on a wax paper lined tray and chill for 10 minutes.
  3. Combine the sesame seeds, breadcrumbs and cilantro on a sheet of baking parchment.
  4. Combine the egg and chilli sauce in a bowl. Dredge the shrimp patties in the flour and brush off the excess.
  5. Dip in the second beaten egg and press firmly in the breadcrumbs. Put on a tray covered in waxed paper, cover and chill for 10 minutes.
  6. Heat a little oil in a frying pan. Cook the shrimp patties in batches over a medium heat for 2 to 3 minutes on each side. Remove and drain on paper towels.
  7. Add a trimmed lettuce leaf to the lower half of each bun.
  8. Place the patties in the burger buns, and serve with the Chipotle Mayonnaise.
  9. Serve with sliced tomato, red onion, pickles or other burger favorites, if desired.
Serve with potato chips or oven-fried waffle-fries for a fantastic, simple meal. An interesting option is to grill some lemons, cut in half and serve on the side. Squeezed on the burgers, the caramelized lemon really adds to the flavors of the sandwich. Goes very well with lemonade, white wine or sangria.
