Savory Chicken a la Epicurus

  • 16 ounces boneless, skinless chicken breasts, cut into 1/2-inch slices
  • 2 teaspoons porcini powder
  • salt, as needed
  • pepper, as needed
  • 2 Tablespoons olive oil
  • 1 Cup mushrooms, sliced
  • 2 teaspoons garlic, minced
  • 1/2 Cup white beans, cooked
  • 2 pinches rosemary, chopped
  • 2 Tablespoons Marsala
  • 1/2 Cup chicken stock
  • 2 Tablespoons truffle butter
  1. Season chicken with porcini powder, salt and pepper.
  2. In a sauté pan over medium heat, warm oil. Add chicken, sear both sides. Add mushrooms, garlic, beans and rosemary.
  3. Sauté until chicken is cooked through.
  4. Deglaze with Marsala and stock; reduce by half. Swirl in butter.
  5. Portion the chicken, mushroom and beans evenly over four plates.
  6. Spoon sauce over chicken.
