Butter Lettuce and Herb Salad

  • 2 small heads butter or Boston lettuce
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon lemon juice
  • 2 Tablespoons Sherry vinegar
  • 1/2 Cup olive oil
  • salt, to taste
  • freshly-ground black pepper, to taste
  • 3 Tablespoons minced fresh herbs; see * Note
  • 4 lemon slices (disks) cut in half - two halves per plate
  1. Wash the lettuce, then dry it and tear it into bite-sized pieces. Place it in a large bowl and chill until ready to toss.
  2. Combine the Dijon, lemon juice and vinegar in a small bowl. Whisk in the olive oil and season with salt and pepper.
  3. Toss the lettuce with the vinaigrette and the herbs.
  4. Serve with lemon slices for garnish. Use the garnish to add more lemon flavor if desired.

* Note: Use any combination of herbs you happen to have in the refrigerator for this salad. Basil, parsley, thyme and chervil work well.
